Fixing Dinner With Limited Function

Oh sure, I can easily make Tostadas for dinner. Just fry up some ground beef with onions and throw in some refried beans. Right? Chop up some toppings and fry some tortillas.

What a reality check! What a challenge!


I should have known better. By the end of the day my right ankle/leg had enough weight bearing without me trying to make dinner, simple at that! But, I wanted to surprise my friend with some kind of a dinner to show my appreciation for everything he has been doing for me. He was so surprised when I offered the invitation.


On top of the beans we had shredded cheddar cheese, chopped lettuce, chopped tomatoes, black olives, salsa, sour cream and avocado. I didn't take much time to make them look very pretty but they sure tasted good. Taking photos was a very last minute thought while we were starting to sit. No photo staging here.

It was a warm summer evening and a nice light beer was a good choice of beverage with the Tostadas. I was thinking about making some vanilla pudding with bananas for dessert but simply was not able to do it. Since I am not able to jump in the car and drive to the store I was having to work with what I had in the pantry.

Much to my surprise when my friend arrived he had some 
Mocha Latte Italian Gelato - - - - - 


and a lovely bouquet of flowers - - - - - 



in his hands. I was so surprised and it made me very happy! He was very grateful for my effort but very concerned about my ankle/leg.

Most of the evening I spent reclining on the sofa with an ice pack on my ankle. I am sure my ankle will feel better in no time.

Hippity Hoppity


It won't be long and The Bunny will be here!

* Celery Water Chestnuts Casserole
* Pineapple Casserole
* Four Bean Salad
* Waldorf Salad

* Caramel Pecan Cream Pie

I'll take pictures. It may be the last "big spread" I am able to do. But, I am enjoying every minute!


I am really loving my garden. Everyday, there is a surprise with something new blooming. Today, I planted some petunias, pansies, geraniums and gerbera daisies in pots for the patio. When they get settled-in they will be so pretty and colorful.  I could not resist when the prices were exceptionally good. Plus, it's therapy, ya know!

Easter Dinner 2013

Last Easter was a very quiet and simple Easter, but nonetheless I enjoyed preparing a nice meal for Three of us. Since my close friend did not have plans I encouraged her to join us for our Easter Ham dinner. I made some new recipes that we liked very much. One was a cauliflower cheese vegetable and another was a celery water chestnut vegetable dish. Along with asparagus and salad we had plenty to eat. Oh, and dessert. 




It was a Simple but very Enjoyable meal. The Cook's spiral sliced (bone-in) hickory smoked honey Ham was so good that I plan to use the same brand again this year.

Many things to do today. Must do some grocery shopping, medical consultation appointment and those annoying miscellaneous errands.

Lunch For One And Bright Colors

Something a little different for today. When I came in from the garden I went straight for the refrigerator for the Braunschweiger and Swiss Cheese that I bought yesterday. Recently, a friend prepared a similar sandwich for me and I have been craving another one something bad. I put this together so fast along with Dutch Crust French Bread, Lettuce, Mayonnaise and Grey Poupon Mustard and my lunch was made! Next time I will add some sliced red onion. I think that is a nice addition. Oh, I also had a banana and a small glass of white wine for lunch.  


                                            It tasted really good!


Love these Bright Colors.




I have had a Very Nice Day and I am feeling Very Healthy. It is Wonderful.

Quick And Easy Eggs

Another simple way to prepare eggs in a hurry. And, minimal clean-up. I have found that this is a quick way to eat a little breakfast when time is short. Of course, you can add toast, juice, coffee, tea - whatever, and it still takes very little time.

 
It really works nicely. I used a large mug so it was only filled half-way. So, more eggs could be used or alternatively, use a smaller mug. Another variable is the size of eggs. Have fun!


I recently clipped this recipe from the February 2012 Woman's Day magazine.

I am trying very hard to eat breakfast with protein every day. Like so many of us, it can be so easy to wait until we are feeling hungry before we think about eating. I really do not have any excuse for this behavior because I now have plenty of time to eat healthy!

Let's Have Breakfast

I love it when I have a nice assortment of fresh fruit to prepare for breakfast. I think the pears are going to have to wait a few days before they ripen. That's OK, it will be something to look forward to.






It seems like I spend a lot more time preparing healthy meals. And, there is always the cleanup. But, it is so worth it to feel the best I can.

I like Greek yogurt with my fruit. And, it is good and healthy. I recently changed to the plain instead of honey added yogurt and I like it just as well. The fruit has a lot of sweetness.

















A little freshly grated nutmeg on the fruit and a half bagel and cup of fresh brewed coffee and I was all set.




It was so tasty. It wasn't until I had finished eating the bowl of fruit that I realized that I forgot to add some of the fresh blueberries that I just purchased. Oh well, I'll add them next time - tomorrow.

It Was Wonderful

Yesterday, I had the opportunity to have a professional full body massage. It had been a long time since I have had that kind of lovely pampering. And, I really needed it. I think it is one of the most wonderful ways of taking good care of yourself. We have many wonderful Certified Massage Therapists in the little town where I live. Many of them are within walking distance of my home. It is truly wonderful!

With the amount of discomfort that I have been having lately, it was very helpful to relax some of my muscles that are so tense and tight. It really helped my body to feel a little more comfortable.

I won the massage at the Silent Auction that was recently held at our Harvest Festival at the church.

 The next best thing may be a Triple Chocolate Meltdown from Applebee's!  And, that is actually what I enjoyed later in the day. I would say that it was a very Successful Day.

Such Indulgence

Last nights dinner  -  down town  -  ended with sinful indulgence of a Brownie Sunday  (Belgian chocolate, hot fudge, vanilla bean ice cream and whipped heavy cream).  But, since we shared it, maybe it wasn't so bad!  Who am I trying to kid, anyway?
 
It is so nice living so close to main street in our little historic town that we can walk to dinner. I never dreamed that I could possibly have a special someone at this stage of my life to walk to town with, especially on a regular basis.

Yesterday was another busy day for me.  Since we are leaving Monday on our trip to Oregon,  I have a lot of last minute things to take care of in the garden. You never know, the weather could get warmer/hotter like what would be our seasonal norm which could get into the 100's.  I do not have automatic watering throughout the garden.  So, I have been setting up hoses with timers for different sections so that I do not have to have someone come every day to water.  It is something that I have wanted to do for quite some time because it would save me a lot of time on a daily basis.

Also, I had a few plants in pots from the nursery that really, really needed to be planted in the ground. I was able to get that accomplished also.  And, of course, there is the general garden, patio and garden paths that I like to have in order before leaving town. The garden is still looking quite lovely and I hope yours does to - especially, if you are a gardener and do the garden work.  It's garden work only when you don't want to do it or don't have time!

Male Shopping and Lobster

That sounds like I am out 'n' about shopping for a man.  No, not so. I am quite sure I have "A Keeper".  Annnywaaaaaay - - - - - - Off we go again down the mountain, through the rolling hills and across the railroad tracks to another mall to finish shopping. This time for My Special Man's vacation wardrobe.  Mission accomplished!  Both of us are getting closer to completing our travel preparations. I am sure this vacation will be like nothing I have experienced in the past. I will be so spoiled after travelling first class and staying in four star hotels throughout Germany. This new chapter in my life is still one of those marvels that I could only have dreamed about ! !


Since it was getting close to lunch time when we got to the "city", we decided to stop at a Red Lobster restaurant  for  lunch. It had been years since I had been to one.  It was similar to when I had eaten their style of seafood in years past.  But, their lobster could not possibly come close to the lobster tail dinner that My Special Man prepared for me at his house a few weeks ago.  The lobster was robust in size, melt in your mouth flavor and served with a garnish of lots of love.  I really am in heaven!

Sunday Morning Preparation

This morning before going to church services I prepared a fresh fruit salad to take to our weekly Sunday Brunch that we have with friends-loved ones. We are so blessed to join in these fun and nourishing events. The fruit available at the grocery store was nice and our selection included: oranges, granny smith apples, gala apples, bananas, blueberries, strawberries, kiwi, fresh pineapple and glazed walnuts for a little garnish along with a few whole strawberries.


And a dusting of powdered sugar and - Ta Da - a colorful bowl of fruit.
This is the view from my dining room window this morning and it is bringing me great delight as I eagerly await the opening of all of the "Red Bird" azaleas that surround Rebbecca At The Well. The Sunshine is casting lovely shadows across the beautiful large rock that surround my property.
